For the Spekulatius Tiramisu, whip whipped cream and mix with remaining ingredients, except applesauce. Add cinnamon to taste.
Start with the cookies as the bottom layer, then spread with applesauce and then with cream. Continue in this way until everything is used up. The cream is the last layer.
Finally, sprinkle with cinnamon or cocoa. Then put the speculaas tiramisu in the refrigerator overnight.
