For the curd cake, drain the peaches. Grease baking tray and dust with flour. Cream butter, 100 g sugar, vanilla sugar, 1 pinch salt and some lemon zest.
Stir in 3 eggs, one at a time. Mix flour and baking powder, stir in briefly. Spread on the baking sheet. Cut peaches into small pieces and place on top. Separate 3 eggs.
Beat egg yolks and 100 g sugar until creamy. Mix curd cheese, pudding powder and some lemon peel. Stir in egg yolk mixture.
Beat 3 egg whites until stiff and fold into curd mixture. Spread on the peaches. Bake in the preheated oven (electric oven: 175 °C, convection oven: 150 °C, gas: level 2) for approx. 25 minutes.
Beat 2 egg whites and lemon juice until stiff. While continuing to beat, add 75 g sugar. Continue beating until the sugar is completely dissolved. Spread on top of the curd mixture.
Bake for approx. 15 minutes. Let cool and enjoy.
