Sauté shallot and garlic in a little olive oil, then cool. Peel the cucumber and cut into pieces, whisk with the buttermilk or yogurt. Add all the ingredients, except for some dill threads and the borage flowers. Season with pepper and salt and put in the refrigerator form.

Cut the smoked salmon into strips and arrange on the cold soup with the dill and the flowers.

Tip: Use creamy natural yogurt for an even finer result!
