Peel the top half of the 4 apples and brush with the juice of one lemon. Hollow out a little bit with a cookie cutter, but do not pierce the bottom. Mix 3 tbsp grated almonds, 6 tbsp curd cheese, 3 tbsp honey, grated zest of one lemon and 1 tbsp rum to make a filling and spread it evenly into the apples. Place the apples one after the other on a round slice of bread in a buttered gratin dish and cover with a flake of butter. Steam in the oven at 180 °C for half an hour.
