Pacific rim (Pacific coast) cuisine is a combination, or “fusion” if you will, of the culinary characteristics of the northern and southern coastal regions of the Pacific. An appropriate example would be salmon with mango sauce, where the salmon comes from the Northwest and the mango sauce from the South. Basically, this cuisine uses a myriad of ingredients, but is decidedly healthy.

In a non-stick frying pan, bring the shallot, vinegar, honey, sake, black pepper and paprika to a boil. Cool. Fold in the remaining ingredients (except oysters), cover and refrigerate overnight. Arrange the oysters on a platter and top each with a small spoonful of the mixture. Serve.
