For the potato nests, peel the potatoes and cut them into potato curls using a Jullien slicer. Soak the cut potatoes in plenty of water for 10 minutes and then pat dry.
Heat the oil and hold a wooden cooking spoon in it to test. When the oil is hot enough, bubbles will form on it. Fry the potatoes in batches in nests for about 3-5 minutes.
Drain the nests on paper towels and then salt them.

The potato nests look nice on plates as a side dish or even as a base.
