Ingredients:

4 large garlic cloves, unpeeled
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano
1/4 teaspoon salt
1 (1 pound) boneless sirloin steak, trimmed of all visible
fat
Directions:
  1. Preheat oven to 400 F.

  2. Wrap the garlic in foil and place on a baking sheet; roast until softened, 10-12 minutes. Remove the garlic from the oven. Spray the broiler rack with nonstick spray; preheat the broiler.

  3. When cool enough to handle, squeeze the garlic from its papery skin into a small bowl. Add the chili powder, cumin, oregano and salt; stir and mash together. Rub the steak on both sides with the garlic and chili mixture.

  4. Increase the oven temperature to broil. Broil the steak 4 inches from the heat until done to taste, about 5 minutes on each side for medium.

  5. Vegetables: double the amount of seasoning rub and toss the exra with chunks of zucchini, scallions, and bell peppers to broil alongside the steak.
